









Midsummer Dinner with Cooking School on May 23-24, 2026
There are smells of smoke, resin and elderflower. The ice chuckles in the shaker.
The evening is warm. The same is the mood when you help conjure up flavors over the embers.
Here — in the midst of the green tranquility of the Gisselfeld Forest — we invite you to a midsummer dinner with you at the food team.
Chef Thomas from Mad Atlas leads the way as we match the embers, cut, stir and taste.
Look forward to a forest experience where the food turns into step with the conversations, the handsome chef and the rice in the crowns of trees. Expect you to learn something new about food.
We mix Woodland cocktails of herbs and flowers, mix local gin with sorrel and pickled hillock, and enjoy a table covered under the tree crowns as darkness falls on and the stars take over.
When the bonfire burns out, spacious rooms and Wake Up Woodland breakfast await the next morning.

Saturday
15.00 — Arrival and welcome cocktail in the garden (Woodland Gin Fizz with sorrel and shelf)
15.30 — Food school by the fire: we light the firewood, harvest herbs, and cook in small teams with Thomas from Mad Atlas as guide.
18.30 — Midsummer dinner under the tree crowns
21.30 — Coffee, avec and gathering by the fire
10:30 p.m. — (Or when you're tired) Overnight in a double room
Sunday
9:30 a.m. -- Wake Up Woodland. Our breakfast of home-baked goods and sinful subtleties
11.00 — Thank you for now and see you again

Snack
Toasted sourdough bread with smoked butter and forest salt (made from roasted leek and seaweed)
Business
Asparagus grilled over an open fire with nut crumble, ram onion oil and sour cream with elderflower
Main course
Long-roast veal with truffle and wild herbs
Baked small onions, glazed in birch juice
Potatoes steamed in hay with lemon thyme and butter from the churns of the forest
Dessert
Glow-roasted pancake with wild berry compote, caramelized milk and crumble of burnt rye
Cocktails & Wines - 2 cocktails and 4 glasses of wine per person

We promise fire in the cheeks, laughter and a smell of smoke in the clothes you won't want to wash out. Anyone can join in, but you have to want to participate in the cooking.
